chicory [chik′ə rē]
pl. chicories [ME cicory < OFr cicorée < L cichorium < Gr kichora, kichoreia, chicory, endive, succory]
1. a perennial weedy plant (Cichorium intybus) of the composite family, usually with blue flowers: the young leaves are used as a salad
2. its root, roasted and ground for mixing with coffee or for use as a coffee substitute
